Slow-Cooker German Red Cabbage and Pork Ribs

Slow-cooked German red cabbage with bacon, pork ribs, and Granny Smith apples for a colorful and hearty dinner.
Ingredients:
  • 4 slices bacon, chopped
  • 6 boneless pork country-style ribs (2 lb)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 6 cups thinly sliced red cabbage (about 1/2 head)
  • 2 Granny Smith apples, peeled, thinly sliced (3 cups)
  • 1 medium onion, finely chopped (1/2 cup)
  • 1/2 cup cider vinegar
  • 1/4 cup apple juice
  • 2 tablespoons sugar
Instructions:
  • Cook bacon in a large skillet until crisp, then transfer it to a large bowl. Season ribs with salt and pepper, and brown them in the bacon drippings. In the meantime, combine cabbage, apples, and onion with the cooked bacon in the bowl.
  • Grease a 4- to 5-quart slow cooker. Add the ribs, keeping the drippings in the skillet. Top the ribs with the cabbage mixture.
  • Combine vinegar, apple juice, and sugar with the drippings in the skillet and bring to a boil. Drizzle the mixture over the ribs and cabbage.
  • Cover and let simmer on low heat for 5 to 6 hours. Use a slotted spoon to carefully transfer the cabbage mixture and ribs from the cooker for serving.
