Elevate dinner with a tropical slow-cooked ham featuring sweet mango, pineapple, and a hint of jalapeño heat.
Ingredients:
  • 4 1/2-pound fully cooked smoked boneless ham
  • 1/4 teaspoon pepper
  • 1 jar (24 ounces) mango in extra-light syrup, drained
  • 1 jar (12 ounces) pineapple preserves
  • 1 jalapeño chili, seeded and chopped
  • 2 tablespoons white wine vinegar
  • 1/4 cup chopped fresh cilantro
  • 1 can (20 ounces) sliced pineapple, drained and cut into sixths
Instructions:
  • 1. Coat the inside of your 4- to 5-quart slow cooker with cooking spray. 2. Add the ham to the slow cooker and season it with pepper. 3. In a blender, combine mango, preserves, chili, and vinegar. Blend on high for 30 seconds. 4. Pour the blended mixture over the ham in the slow cooker.
  • Simmer gently, covered, for 6 to 8 hours on Low heat setting.
  • Take the ham out of the cooker and transfer it to a serving platter. Sprinkle the ham with 1 tablespoon of cilantro. Mix the remaining 3 tablespoons of cilantro and the pineapple into the sauce in the cooker. Serve the sauce alongside the ham.
