Slow-Cooker Jerk Pork Sandwiches

Create a fusion masterpiece: Jerk pork sandwiches with zesty corn relish, fresh cilantro, and crisp lettuce.
Ingredients:
  • 2 1/2- to 3-pound pork boneless shoulder roast
  • 1 medium onion, chopped (1/2 cup)
  • 3 tablespoons Caribbean jerk seasoning
  • 1/2 cup chili sauce
  • 1/2 cup purchased corn relish
  • 2 tablespoons chopped fresh cilantro
  • 1 cup shredded lettuce
  • 8 pita fold breads
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Remove any netting or strings from the pork roast and cut it into 2-inch pieces. Place the pork and onion in the cooker. Coat them with jerk seasoning by sprinkling it over the mixture and tossing everything together. Finally, pour the chili sauce over the top.
  • Simmer gently, covered, for 9 to 11 hours on Low heat.
  • On a cutting board, shred the pork using 2 forks. Transfer the shredded pork back to the cooker. Combine the corn relish and cilantro in a small bowl. Serve by layering lettuce, pork mixture, and corn relish in pita fold breads.
