Slow-Cooker Orange Pork Tenderloin with Butternut Squash

Create a delicious slow-cooker meal with just 5 ingredients in 20 minutes for a satisfying dinner later!
Ingredients:
  • 3 pounds butternut squash, peeled and cut into 2-inch pieces (6 cups)
  • 1/2 teaspoon salt
  • 1 pork tenderloin (2 pounds)
  • 1/4 cup orange marmalade
  • 2 cloves garlic, finely chopped
Instructions:
  • Gently place the squash around the edge of a 3- to 4-quart slow cooker. Sprinkle with salt. Then, nestle the pork into the slow cooker, allowing it to overlap with the squash slightly. Combine the marmalade and garlic, and spread this mixture evenly over the pork.
  • Cook on low heat for 7 to 8 hours, covered.
  • Take the cooked pork out of the cooker and transfer it to a cutting board. Slice the pork and serve it alongside the squash.
