Slow-Cooker Pizza Pork Chops

Savory pork chops with pasta sauce for a pizza-inspired meal.
Ingredients:
  • 6 pork loin chops, 1 inch thick (about 2 1/4 lb)
  • 1/4 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 2 cups tomato pasta sauce
  • 4 cups cooked orzo
  • 1 cup shredded mozzarella cheese (4 oz)
Instructions:
  • Trim any excess fat from the pork. Season the pork with salt and pepper. Heat oil in a 12-inch skillet over medium-high heat. Add the pork and cook for about 5 minutes, turning once, until browned.
  • Place the pork in a 3 1/2- to 4-quart slow cooker, sprinkle the onion over the pork, and pour in the pasta sauce.
  • Cover and simmer on low heat for 4 to 6 hours.
  • Spread the orzo on a serving platter, layer the pork over the orzo, pour the sauce over the pork, and finish with a generous sprinkle of cheese.
