Slow-Cooker Turkey Breast with Sweet Potatoes

Tender turkey and sweet potatoes slow-cooked to perfection. Pair with a refreshing spinach salad in raspberry vinaigrette.
Ingredients:
  • 4- to 5-pound bone-in turkey breast, thawed if frozen
  • 2 to 3 dark-orange sweet potatoes, peeled and cut into 1-inch pieces
  • 1 cup frozen pearl onions (from 1-pound bag), thawed
  • 1/2 cup Progresso™ chicken broth (from 32-ounce carton)
  • 1/4 cup orange marmalade
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon dried marjoram leaves
  • 2 cloves garlic, finely chopped
  • 2 tablespoons cornstarch
  • 2 tablespoons water
Instructions:
  • Prepare your 5- to 6-quart slow cooker with cooking spray. Add the turkey into the cooker and surround it with sweet potatoes and onions. Combine all remaining ingredients in a small bowl, excluding cornstarch and water, and pour over the turkey and vegetables.
  • Simmer covered on Low heat for 7 to 8 hours.
  • Take out the turkey and vegetables from the cooker and keep them covered to stay warm. If you'd like, remove any excess fat from the juices in the cooker. Transfer the juices into a 4-cup microwavable measuring cup. Combine cornstarch and water in a small bowl until it forms a smooth mixture, then stir it into the juices in the cup. Microwave uncovered on High for 2 to 3 minutes, stirring every minute, until the mixture thickens. Serve the thickened sauce with the turkey and vegetables.
