Ingredients:
  • 60ml olive oil
  • 12 small (about 50-70g) whole fish (such as small whiting, garfish or sardines)
  • 40.00 ml grated lemon rind
  • 40.00 ml chopped flat-leaf parsley
  • 20.00 ml finely chopped capers
  • Lemon wedges, to serve
Instructions:
  • Prepare a foil-lined baking tray and generously brush it with olive oil. Clean and scale the fish as instructed on page 104, then place it flat on the tray. Drizzle 1 tablespoon of olive oil over the fish and season with salt and pepper.
  • Fire up the grill on high heat.
  • Cook the fish on the grill for 1 1/2 minutes on each side.
  • Mix the leftover oil with lemon zest, garlic, parsley, and capers. Arrange the fish on plates and evenly spread the mixture on top. Garnish with lemon wedges before serving.
