Smoked Pork Chop Packets with Bourbon

Ingredients:
  • 4 bone-in smoked pork chops (about 1 3/4 lb)
  • 1/4 cup bourbon
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground red pepper (cayenne)
  • 2 tablespoons unsalted butter
  • 1 clove garlic, finely chopped
  • 1 can (15.8 oz) black-eyed peas, drained, rinsed
  • 1/2 lb fresh green beans, ends trimmed, beans cut in half crosswise
Instructions:
  • Preheat oven to a toasty 450°F. Prepare 4 (18x12-inch) sheets of heavy-duty foil, then generously center 1 pork chop on each sheet.
  • Combine bourbon, brown sugar, mustard, and ground red pepper in a microwave-safe measuring cup. Microwave uncovered on High for 2 to 3 minutes until reduced to about 3 tablespoons. Brush the mixture evenly over the pork.
  • In a microwave-safe bowl, heat butter and garlic on High for 30 to 45 seconds until butter is melted. Add peas and green beans, toss gently. Spoon pea-bean mixture evenly over each pork chop.
  • Place two pieces of foil together so the edges meet. Seal the edges by making a tight 1-inch fold, then fold again to allow space for heat circulation and expansion. Fold the other sides to seal the packet. Put the packets in an ungreased 15x10x1-inch pan.
  • Bake for around 30 minutes or until pork chops are piping hot and green beans are tender-crisp. To serve, cut a large X on top of each packet; gently fold back foil to release steam. Transfer pork chops, veggies, and pan juices to individual plates.
