Enhance smoked pulled chicken with cherry wood chips and a flavorful garlicky yogurt marinade.
Ingredients:
  • 1.5 cups plain low-fat yogurt
  • 3 cloves garlic, mashed to a paste
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 (4 pound) whole chicken, split lengthwise
  • cherry wood chips
Instructions:
  • In a large zip-top bag, mix together yogurt, garlic, lemon juice, pepper, salt, paprika, and cumin. Add chicken halves, ensuring they are fully coated. Remove excess air, seal the bag, and refrigerate for at least 8 hours to marinate.
  • Soak wood chips in water 30 minutes before cooking. Preheat outdoor grill to medium-high heat and lightly oil the grate.
  • Spread the soaked wood chips over the hot coals. Take the chicken out of the marinade, allowing any extra to drip off. Put the chicken on the hot side of the grill with the skin facing down. Dispose of the rest of the marinade.
  • Grill chicken until perfectly seared, about 4 minutes. Then move to indirect heat, cover, and cook while turning occasionally until the thickest part of the thigh reaches 175 degrees F (79 degrees C), roughly 45 minutes.
  • Let the cooked chicken rest on a cutting board for 10 minutes. Remove and discard the skin, then shred the meat using 2 forks.
