Smoked salmon, avocado and herb tarts

Impress guests with these easy and delicious tarts for any occasion!
Ingredients:
  • 3 sheets frozen puff pastry, partially thawed
  • 1 egg, lightly beaten
  • 1 avocado
  • 21.00 gm lemon juice
  • 1 tsp ground coriander
  • 30.00 ml finely chopped fresh chives
  • 30.00 ml small fresh dill sprigs
  • 150g smoked salmon, sliced
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and prepare a baking tray by lining it with baking paper.
  • Cut out 20 circles from the pastry using a 7.5cm round cutter. Then cut a smaller circle from the center of 10 circles using a 5.5cm round cutter. Discard the small cut-outs. Place the whole circles on a prepared tray. Top each whole circle with a pastry ring. Brush with egg wash. Bake for 10 minutes until golden and puffed. Let them stand for 15 minutes before serving.
  • Blend avocado, lime juice, and coriander in a food processor until velvety. Season with salt and pepper. Mix in 2 teaspoons of chives and 2 teaspoons of dill. Spread avocado mixture onto pastry cases. Garnish with salmon, extra chives, and dill. Serve promptly.
