Smoked salmon & avocado sandwiches

Create decadent gourmet sandwiches for a luxurious high tea at home.
Ingredients:
  • 8 slices wood-fired bread
  • 79.20 gm good quality mayonnaise
  • 120g smoked salmon
  • 2 tsp drained capers, rinsed
  • 1 ripe avocado, peeled, deseeded, sliced
  • 1 lemon, halved
  • 30g snow pea sprouts
  • Salt & ground black pepper, to taste
Instructions:
  • Take 4 of the bread slices and generously spread them with creamy mayonnaise. Layer on the savory smoked salmon, briny capers, and creamy avocado. Drizzle with a fresh burst of lemon juice and top with delicate snow pea sprouts. Complete the sandwiches by adding the remaining bread slices on top, then slice into serving portions. Place the finished sandwiches on a plate, cover them with plastic wrap and a damp tea towel, and store in the refrigerator until you're ready to enjoy.
