Smoked salmon and lettuce bites

Delicious lettuce cup appetizers, perfect for picnics too.
Ingredients:
  • 2 green onions, thinly sliced
  • 20.00 ml drained baby capers, rinsed
  • 20.00 ml finely chopped fresh dill
  • 2 tsp finely grated lemon rind
  • 42.00 gm lemon juice
  • 18.20 gm olive oil
  • 200g smoked salmon, finely chopped
  • 1 baby cos lettuce heart
Instructions:
  • Combine onion, capers, dill, lemon rind, lemon juice, and oil in a bowl, then season with salt and pepper. Gently separate lettuce leaves and thoroughly wash and dry with paper towels.
  • Right before serving, gently fold the salmon into the flavorful caper mixture until fully coated. Transfer the delectable mixture to a serving bowl and generously spoon it over fresh lettuce leaves. Enjoy!
