Smoked salmon dip

Impress guests with a decadent smoked salmon cream cheese dip.
Ingredients:
  • 3 Lebanese cucumbers
  • 250g packet cream cheese, chopped, softened
  • 176.25 gm sour cream
  • 20.00 ml finely grated lemon rind
  • 42.00 gm lemon juice
  • 125.00 ml chopped fresh dill
  • 82.50 ml drained baby capers in brine
  • 120g smoked salmon, roughly chopped
  • 4 radishes, trimmed, washed, halved
  • 1 celery stalk, thickly sliced diagonally
  • 8 baby (Dutch) carrots, trimmed, peeled
  • Lavosh crackers, to serve
Instructions:
  • Peel and dice 1 cucumber after deseeding it. Combine cream cheese, sour cream, lemon rind, and lemon juice in a bowl. Mix until smooth. Gently fold in dill, capers, diced cucumber, and salmon. Cover with plastic wrap and refrigerate for 30 minutes to enhance the flavors.
  • Cut the remaining cucumbers in half and then slice them thickly on a diagonal. Serve the dip with radish, celery, sliced cucumber, carrot, and crackers.
