Smoked salmon pȃté

Impress with this irresistible seafood dish, perfect for starters or buffets. Enjoy a luxurious blend of seafood textures complemented by a burst of sea flavor from salmon caviar.
Ingredients:
  • 150 g cooked peeled prawns from sustainable sources
  • 150 g quality smoked salmon from sustainable sources
  • 150 g white crabmeat from sustainable sources
  • 280 g cream cheese
  • 25 g salmon caviar plus extra to serve, from sustainable sources
  • 1 lemon
  • new season’s extra virgin olive oil
  • cayenne pepper
  • 1 small red onion
  • 1 fresh red chilli
  • 1 celery heart
  • ½ a bunch of fresh dill (15g)
  • 2 lemons
  • 1 loaf of sourdough bread
Instructions:
  • GET AHEAD - Finely chop the prawns, smoked salmon, and crabmeat, then mix in a bowl with cream cheese, caviar, lemon zest, lemon juice, and black pepper. Spoon mixture into a dish, smooth it out, and refrigerate. - Prepare garnishes by finely chopping red onion, slicing chilli, celery, and dill, and cutting lemons into wedges. Refrigerate. ON THE DAY - Slice and toast bread. - Before serving, score criss-cross pattern on top of pâté, drizzle with oil, sprinkle cayenne, then either serve on a platter for self-serving or plate up individually with garnishes.
