Smoked salmon pasta

Ingredients:
  • 125 g fresh lasagne sheets
  • 2 spring onions
  • 80 g spinach
  • 60 g smoked salmon (2 slices)
  • ½ a lemon
  • 5 g Parmesan cheese
  • olive oil
  • 1 tablespoon cottage cheese
  • optional: extra virgin olive oil
Instructions:
  • 1. Boil the kettle. Cut the lasagne sheets in half lengthwise and then into 2cm strips. Use a crinkle-cut knife if you have one. Trim the spring onions and finely chop them along with the spinach and half the salmon. Grate the lemon zest and the Parmesan separately. Place a 28cm frying pan on high heat. Once the pan is hot, add a drizzle of olive oil, spring onions, spinach, chopped salmon, and lemon zest. Add the pasta to the pan and pour in just enough boiling water to cover the pasta, around 250ml. Let it cook for 4 minutes until most of the water is absorbed and you have a creamy sauce. Stir regularly, adding a splash of water if needed. Turn off the heat, squeeze in lemon juice, mix in cottage cheese and Parmesan, season to taste. Gently place the remaining salmon on top, drizzle with extra virgin olive oil if desired.
