Upgrade your mac 'n cheese with smoky cheddar and fire-roasted tomatoes for bold, delicious flavor.
Ingredients:
  • 3 cups uncooked elbow macaroni (12 oz)
  • 1 1/2 cups whipping cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon coarse (kosher or sea) salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 8 oz smoked Cheddar cheese, shredded (2 cups)
  • 2 cans (14.5 oz each) Muir Glen™ organic fire roasted diced tomatoes, well drained
  • 1/4 cup sliced green onions (4 medium)
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup Progresso™ plain bread crumbs
  • 2 teaspoons olive oil
Instructions:
  • Prepare and cook the macaroni according to the instructions on the box. Once cooked, drain the macaroni and return it to the saucepan, covering it to keep warm.
  • Preheat oven to 375°F. Grease a 13x9-inch (3-quart) glass baking dish. In a 2-quart saucepan, bring whipping cream, mustard, salt, and red pepper to a boil. Lower the heat and whisk in Cheddar cheese until smooth.
  • Cover the macaroni with the sauce, then mix in the tomatoes and onions. Transfer the mixture to a baking dish. Combine Parmesan cheese and bread crumbs in a small bowl, stir in oil, and sprinkle over the macaroni.
  • Bake until the edges are bubbly and the top is golden brown, approximately 15-20 minutes.
