Snickers Pod pie

Impress with Snickers Pie: peanut butter cream, chocolate ganache.
Ingredients:
  • 75g butter, melted, plus extra, to grease
  • 250g butternut snap biscuits, coarsely broken
  • 250g cream cheese, chopped, at room temperature
  • 260g (1 cup) smooth peanut butter
  • 4.40 gm vanilla extract
  • 80g (1/2 cup) icing sugar mixture
  • 200g milk chocolate, chopped
  • 60ml (1/4 cup) thickened cream
  • Pods with Snickers, to decorate
  • Melted dark chocolate, to drizzle
  • Roasted unsalted peanuts, to sprinkle (optional)
Instructions:
  • Prepare a square 18cm cake pan by lining both the base and sides with foil, letting the foil hang over the edges. Brush the foil with additional melted butter. Crush the biscuits in a food processor until they form fine crumbs. Add the butter and continue processing until thoroughly mixed. Pour the mixture into the pan and press down firmly on the base and up 4cm on the sides. Chill in the fridge until needed.
  • With electric beaters, blend cream cheese, peanut butter, and vanilla extract until creamy. Gradually add icing sugar, one large spoonful at a time, beating thoroughly after each addition until incorporated. Spread the mixture over the biscuit base and refrigerate for 1 hour until chilled.
  • Melt the chocolate and cream together in a heatproof bowl over simmering water, ensuring the bowl doesn’t touch the water. Stir until smooth, then pour over the peanut butter mixture. Sprinkle with the pods and refrigerate for 1 hour to set.
  • Lift the pie out of the tin using the overhanging foil, then carefully remove the foil. Drizzle with melted chocolate and sprinkle with peanuts to your liking.
