Decadent chocolate pudding with Snickers, whipped cream, and caramel sauce.
Ingredients:
  • 75g butter
  • 128.75 gm milk
  • 239.40 gm brown sugar
  • 150.00 gm self-raising flour
  • 42.90 gm cocoa powder
  • 4 x 50g Snickers chocolate bars, chopped
  • 437.50 gm boiling water
  • Whipped cream, to serve
  • Chopped salted roasted peanuts, to serve
  • 59.40 gm brown sugar
  • 126.25 gm pure cream
  • 15g butter
Instructions:
  • Preheat your oven to 180C/160C fan-forced and generously grease an 8-cup-capacity ovenproof dish.
  • In a saucepan over medium heat, combine butter, milk, and 2/3 cup of sugar. Stir and cook for 3 minutes until the butter is melted. Remove from heat and transfer to a large heatproof bowl. Let it cool for 5 minutes before using.
  • Sift the flour and half of the cocoa powder together in a bowl. Mix well. Gently fold in the egg and half of the chopped Snickers bars.
  • Spread the mixture evenly in the prepared dish placed on a baking tray. Dust the remaining cocoa powder over the top, followed by sprinkling the remaining sugar. Carefully pour boiling water over the mixture using the back of a large metal spoon. Bake for 40 to 45 minutes or until the pudding springs back in the center when touched. Let it stand for 5 minutes before serving.
  • Prepare the Caramel sauce: In a small saucepan over medium heat, stir the ingredients for about 3 minutes until the sugar dissolves. Let it come to a boil, then reduce the heat to low and simmer for 3 to 4 minutes until slightly thickened.
  • Finish the pudding by generously dolloping whipped cream over the top, then sprinkle with peanuts and the remaining chopped Snickers. When ready to serve, elegantly drizzle caramel sauce over each portion.
