Snickers ice-cream pie recipe

Indulge in a decadent Snickers ice cream pie - a stunning and foolproof sweet treat.
Ingredients:
  • 2 x 250g packets butternut snap cookies
  • 125g butter, melted
  • 1 litre caramel ice-cream
  • 2 x 55g Snickers chocolate bars, thinly sliced
  • 62.50 ml unsalted roasted peanuts, roughly chopped
  • Salted caramel sauce, to serve
Instructions:
  • Prepare a 6cm-deep, 20cm round springform pan by greasing it and lining the base and sides with baking paper. Using a food processor (see note), finely chop 335g of cookies. Add melted butter and process until combined. Evenly press the cookie mixture over the base and 5cm up the side of the prepared pan. Chill in the freezer for 20 minutes or until set.
  • Place the ice-cream in a large bowl and allow it to stand for 10 minutes until softened to the perfect consistency (do not let it melt).
  • Place scoops of creamy vanilla ice cream into the crunchy cookie crust. Smooth out the top for a perfect finish. Layer slices of delicious Snickers candy bars on top. Sprinkle a generous amount of crunchy peanuts over everything. Place the dessert back in the freezer and let it set for at least 6 hours, ideally overnight, until perfectly frozen.
  • Thaw the pie at room temperature for 15 minutes, then plate it, drizzle with caramel sauce, cut into wedges, and serve promptly.
