Sauteed snow peas with toasted pine nuts, mint, garlic, and a flavorful blend of olive and sesame oils.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1/2 pound snow peas, rinsed, dried, tips of the ends cut off, strings removed
  • 1/4 cup pine nuts
  • 1 clove garlic, minced
  • 1/4 teaspoon dark sesame oil
  • 10 large mint leaves, chopped
Instructions:
  • In a large skillet over medium-high heat, sauté snow peas, garlic, and pine nuts in olive oil. Stir well to coat and cook for 1-2 minutes until snow peas are tender-crisp. Be careful not to overcook them, they should remain slightly crunchy.
  • Take the mixture off the heat and blend in the fragrant sesame oil and fresh mint leaves. Serve promptly.
