Snowball vanilla and marshmallow ice-cream tart recipe

Frozen 2 inspired no-bake ice cream tart that delights all ages.
Ingredients:
  • 400g Dutch spiced biscuits (speculaas)
  • 160g unsalted butter, melted
  • 500g cream cheese, softened
  • 395g can sweetened condensed milk
  • 375ml (1 1/2 cups) thickened cream
  • 1 1/2 tsp vanilla bean paste
  • Sky blue food colouring, to tint
  • 300ml crème fraîche, whipped to soft peaks
  • 4 white macarons
  • 7 white marshmallows, toasted
  • Blue edible glitter, to serve
  • Mixed blue and white sprinkles, to decorate
Instructions:
  • Prepare a 25cm fluted tart tin with a removable base by greasing it.
  • 1. Pulse the biscuits in a food processor until finely crushed. 2. Add the butter and pulse until fully combined. 3. Transfer the biscuit mixture to the prepared tin and press it evenly over the base and up the sides. 4. Chill in the freezer for 30 minutes until firm or until ready to use.
  • In a bowl, combine cream cheese, condensed milk, thickened cream, vanilla, and desired food coloring using electric beaters until smooth. Spread mixture over biscuit base and freeze for 6 hours or overnight until firm.
  • Spread the fluffy crème fraîche over most of the tart, then layer on the macarons and marshmallows. Sprinkle with edible glitter and colorful sprinkles. Slice and enjoy!
