Delicious walnut snowball cookies: walnuts, flour, butter, vanilla - rolled, powdered sugar. Freezes and ships perfectly!
Ingredients:
  • 1 cup all-purpose or cake flour
  • 1 1/2 cups walnuts, finely chopped
  • 2 to 3 Tbsp sugar
  • 8 tablespoons (4 ounces) unsalted butter, at room temperature
  • Pinch of salt
  • Powdered sugar, to coat (about 1 cup)
Instructions:
  • Prepare the dough by combining flour, walnuts, salt, and sugar in a large bowl. Stir in vanilla extract. Add butter in small pieces and use your clean hands to mix everything until the mixture resembles a coarse meal with nut pieces.
  • Refrigerate the dough for a minimum of 30 minutes or overnight for best results.
  • Preheat the oven to a toasty 300°F and prepare a baking sheet with parchment paper or a silicone baking mat.
  • Shape the dough into small walnut-sized balls and place them on the cookie sheet, making sure to leave at least an inch of space between each one.
  • Bake: Let the cookies bake for 35 minutes until golden brown.
  • Roll warm cookies in powdered sugar, then set aside on a rack to cool completely. Dust again with powdered sugar when cooled.
