Delectable honey-walnut cookies, a hit with kids, ideal for Rosh Hashanah or any sweet occasion.
Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground cinnamon
  • 0.75 cup chopped walnuts
  • 0.75 cup butter
  • 0.5 cup brown sugar
  • 0.75 cup honey
  • 1 teaspoon vanilla extract
Instructions:
  • Combine flour, baking soda, salt, and cinnamon in a bowl, then fold in the walnuts.
  • Using an electric mixer, blend the butter and brown sugar until fluffy in a separate large bowl. Add honey, vanilla extract, and egg, mixing until thoroughly combined. Gently incorporate the flour mixture into the wet ingredients, being careful not to overmix. Refrigerate the dough for at least 1 hour or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare your baking sheets by lightly greasing them or lining them with parchment paper.
  • Portion 1 tablespoon of dough per cookie, shaping each into a ball before placing them on the baking sheets.
  • Bake the cookies for 8 to 10 minutes until they are perfectly puffy with a slightly gooey center. Let them cool on the baking sheets for 5 minutes before transferring to racks to finish cooling.
