Whip up soft and delicious peanut butter cookies that last for days in a sealed container for easy snacking all week.
Ingredients:
  • 0.5 cup margarine, softened
  • 0.5 cup peanut butter
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 0.75 teaspoon baking soda
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease 2 baking sheets.
  • In a large bowl, use an electric mixer to blend margarine, peanut butter, sugars, egg, and vanilla until light and fluffy. Incorporate flour, baking soda, and salt until well mixed. Chill dough in the refrigerator for 15 minutes before proceeding.
  • Shape the chilled dough into walnut-size balls and arrange them 2 inches apart on the baking sheets.
  • Bake in the oven until edges are lightly browned, about 7 to 10 minutes. Avoid overbaking. Cool cookies on a wire rack and store in an airtight container to maintain softness.
