Soft Pretzel Bites

Customizable soft pretzel bites with choice of topping and dipping sauce.
Ingredients:
  • 1.5 cups water
  • 6 tablespoons butter, melted
  • 2 tablespoons brown sugar
  • 1 (.25 ounce) package active dry yeast
  • 2.5 teaspoons kosher salt
  • 4 cups all-purpose flour, or more as needed
  • 1 teaspoon vegetable oil
  • 3 quarts cold water
  • 0.5 cup baking soda
  • cooking spray
  • 1 egg
  • 1 tablespoon water
Instructions:
  • In the bowl of a stand mixer fitted with the hook attachment, combine 1 1/2 cups water, butter, brown sugar, yeast, and salt until fully mixed. Allow it to rest for approximately 5 minutes.
  • Mix in the 4 cups of flour gradually on low speed, adding 1 cup at a time. If the dough is sticky, incorporate an extra 1/2 cup of flour. Increase speed to medium and knead until dough is smooth, pulling away from the bowl's sides, for about 4 to 5 minutes. Add a little more flour if the dough remains slightly tacky.
  • Prepare a spacious mixing bowl by coating it with oil. Place the dough ball inside the bowl, then seal it with plastic wrap, allowing it to rise in a cozy spot for approximately 1 hour.
  • Preheat your oven to 425 degrees F (220 degrees C) and generously grease a sheet pan with cooking spray.
  • In a large saucepan, bring 3 quarts of water to a boil. Gradually sprinkle in the baking soda, then bring it back to a boil.
  • Remove the dough from the bowl, flatten it into a disc shape, and cut it into 8 wedges. Roll each wedge into a 24-inch rope, then cut each rope into 1-inch pieces.
  • Boil dough pieces in batches for about 35 seconds, then transfer to a prepared sheet pan. Combine egg with 1 tablespoon of water and brush over the tops of each boiled dough piece. Repeat with the rest of the dough.
  • Bake at the ideal temperature until beautifully golden, for about 14 to 16 minutes. Allow to cool slightly before enjoying.
