Sourdough Ciabatta Bread

Easy sourdough ciabatta loaves made effortlessly with a bread machine's Dough cycle.
Ingredients:
  • 1.5 cups warm water
  • 1 tablespoon milk
  • 1 cup sourdough starter
  • 1 teaspoon white sugar
  • 1.5 teaspoons salt
  • 3.25 cups bread flour
  • 1 teaspoon vital wheat gluten
  • 1.5 teaspoons active dry yeast
Instructions:
  • In a bread machine, combine water, milk, olive oil, sourdough starter, sugar, salt, flour, and vital wheat gluten as listed. Sprinkle yeast over the flour. Start the Dough cycle and let it run for about 90 minutes. Once done, remove the dough from the machine.
  • Transfer the dough to a generously floured surface and allow it to rest for 15 minutes.
  • Coat hands and a bench knife generously with flour before touching the dough, ensuring not to incorporate excess flour into the dough. Divide dough into 3 equal parts and shape them into round loaves. Put loaves on generously floured parchment paper and cover with large bowls, making sure they are not in direct contact with the loaves. Allow them to rise in a warm spot for approximately 60 minutes.
  • Place a Dutch oven on the lowest oven rack and preheat to 450°F (230°C).
  • Gently raise the parchment paper from both ends and place it into the preheated Dutch oven. Cover the Dutch oven with the lid.
  • Bake the loaf in the preheated oven until golden, approximately 20 minutes. Uncover and bake for an additional 2 to 5 minutes until the top is golden brown. Transfer the loaf with parchment paper onto a towel to cool. Repeat the same process with the remaining 2 loaves.
