Creamy lima beans cooked with crispy bacon, indulgent cream, and lavish butter for a decadent side dish.
Ingredients:
  • 1 (16 ounce) package dried lima beans
  • 5 slices bacon, chopped
  • 1 cup heavy whipping cream
  • 0.5 cup butter
  • salt and ground black pepper to taste
Instructions:
  • In a large pot, add lima beans and cover with water to soak overnight. Drain and refill the pot with fresh water to cover the beans.
  • In a hot skillet, sizzle bacon until crispy, for about 5 minutes. Transfer the bacon to a paper towel-lined plate using a slotted spoon to drain, saving about 2 teaspoons of the flavorful bacon drippings.
  • Combine cooked crispy bacon and its flavorful drippings with the lima beans in a pot and bring to a boil. Simmer on medium-low heat until beans are tender, about 40 to 60 minutes. Stir in heavy cream and butter, cook until thickened for approximately 15 more minutes. Season the dish with salt and pepper to taste.
