Indulgent Southern mac and cheese pie - creamy, cheesy comfort in every bite, a beloved staple at church dinners and social gatherings.
Ingredients:
  • cooking spray
  • 2 cups uncooked elbow macaroni
  • 2 (12 ounce) cans evaporated milk
  • 1 tablespoon ground black pepper
  • 3 eggs
  • 1 teaspoon salt
  • 4 cups shredded Cheddar cheese
  • 1 pinch paprika, or to taste
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C), then generously coat a 9x13-inch casserole dish with cooking spray.
  • 1. Boil a pot of salted water. Add elbow macaroni and cook until al dente, about 8 minutes. Drain pasta.
  • As the macaroni cooks, gently melt butter in a large pot over low heat. Add evaporated milk and pepper, stirring until heated through.
  • In a bowl, whisk eggs until smooth. Slowly incorporate 1 tablespoon at a time of the hot evaporated milk mixture (about 1/2 cup in total) into the eggs. Whisk until well combined. Pour the egg mixture back into the saucepan and gently heat, whisking constantly, until the sauce thickens just before simmering.
  • Combine cooked macaroni and salt with care. Layer 1/4 of the macaroni mixture in the bottom of the casserole dish, then add 1 cup of shredded Cheddar cheese. Repeat layering three more times and finish by sprinkling paprika over the top.
  • Bake until bubbly in the preheated oven for approximately 20 minutes.
