Southern-style macaroni salad with creamy mayo dressing and fresh veggies – perfect for parties and potlucks!
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 (8 ounce) jar mayonnaise (such as Hellman's®)
  • 6 large eggs, at room temperature
  • 3 medium tomatoes, quartered
  • 3 stalks celery, chopped
  • 6 ounces radishes, diced
  • 1 white onion, diced
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
  • 1 pinch celery seed
Instructions:
  • 1. Boil a large pot of lightly salted water. 2. Cook elbow macaroni in the boiling water, stirring occasionally, until al dente, about 10 minutes.
  • In a separate pot, gently place the eggs and cover them with water. Bring the water to a boil, then switch off the heat and allow the eggs to sit for 10 minutes. Drain the eggs.
  • After cooking, drain the macaroni and return it to the pot. Stir in mayonnaise until creamy. Add diced boiled eggs and mix gently. Fold in tomatoes, celery, radishes, and onion. Transfer to a large bowl and season with salt, pepper, and celery seed. Enjoy!
