Crispy panko pork cutlets with garlic mashed potatoes, veggies, and spicy mustard-vinegar sauce.
Ingredients:
  • 2 cups panko bread crumbs
  • 1 tablespoon parsley flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon ground black pepper
  • 1 (1 pound) pork tenderloin, cut crosswise into 1/2-inch thick slices
  • 0.25 cup olive oil
Instructions:
  • Combine panko bread crumbs, parsley flakes, garlic powder, onion powder, and black pepper in a bowl. Coat both sides of tenderloin slices with the crumb mixture.
  • In a skillet, heat olive oil over medium-high heat. Fry the pork until the crumb coating is golden brown and the pork is cooked through, about 2 to 3 minutes per side. Ensure the internal temperature reaches at least 145 degrees F (65 degrees C) using an instant-read meat thermometer.
