Whip up quick and tasty Southwest chicken tacos using BBQ sauce and rotisserie chicken.
Ingredients:
  • 1 cup barbecue sauce
  • 1 tablespoon Southwest seasoning
  • 0.5 teaspoon hot sauce
  • 2 teaspoons olive oil
  • 3 cups shredded rotisserie chicken
  • 8 (6 inch) flour or corn tortillas
  • 0.5 cup chopped tomatoes

  • 0.5 cup coarsely chopped fresh cilantro
  • Lime wedges, for serving
Instructions:
  • Mix together the barbecue sauce, seasoning, and hot sauce in a small bowl. Allow the flavors to meld for 15 minutes.
  • Warm the oil in a large skillet over medium heat until it shimmers.
  • Add succulent chicken pieces to the sizzling pan and stir until heated through, about 3 to 5 minutes.
  • Pour the flavorful barbecue sauce mixture over the chicken and simmer until the sauce thickens slightly, ensuring every piece of chicken is perfectly coated.
  • Warm the tortillas as instructed on the package.
  • Dollop the chicken mixture evenly in the center of each tortilla.
  • Sprinkle each taco generously with fresh tomatoes, Borden® Queso Fresco Crumbling Cheese, and fragrant cilantro. Accompany with lime wedges for a perfect finishing touch.
