Quick and delicious Southwest egg and cheese boats - perfect for brunch or a quick meal.
Ingredients:
  • 2 oval sandwich rolls
  • 3 tablespoons whole milk
  • 1 (4 ounce) can chopped green chile peppers
  • 1 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded pepper Jack cheese
  • 0.5 teaspoon smoked paprika
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a rimmed baking sheet by lining it with parchment paper.
  • Cut a V shape in each roll, keeping the ends intact. Remove the V-shaped wedge and gently hollow out the rolls to create shallow bread bowls, ensuring not to cut through the bottom or sides. Place the bread bowls on the baking sheet.
  • In a bowl, vigorously whisk together eggs and milk until smooth. Fold in green chile peppers, Cheddar cheese, pepper Jack cheese, paprika, and salt. Gradually pour the mixture into the prepared rolls, ensuring even distribution with a spoon.
  • Bake in the hot oven until the egg mixture is fully set and the cheese is lightly browned, approximately 30 minutes. Allow to cool for 3 minutes before serving.
