Southwest Herb Flank Steak

Elevate Southwest night with flavorful herb-crusted broiled beef steak topped with juicy tomatoes, ready in just 40 minutes!
Ingredients:
  • 1 pound beef flank steak
  • 1 cup chopped plum (roma) tomatoes (4 to 6 tomatoes)
  • 1/4 cup lime juice
  • 3 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh oregano
Instructions:
  • Make shallow cuts on both sides of the steak; then, transfer it to a large resealable plastic bag or a 13x9-inch glass baking dish.
  • In a medium bowl, combine the remaining ingredients and spoon the mixture over the steak. Cover the baking dish with plastic wrap or seal in a bag. Allow it to sit at room temperature for 15 minutes.
  • Preheat broiler. Grease broiler pan. Put steak on pan; brush with marinade from bag. Keep tomatoes aside. Broil steak 4 to 6 inches from heat for 10 to 15 minutes, flipping halfway through, until cooked to your liking.
  • Using a slotted spoon, pile tomatoes onto the steak and discard excess liquid. Broil for an additional 3 to 5 minutes until tomatoes are gently browned. Slice the steak thinly at a diagonal angle to serve.
