Protein-packed plant-based bowls with quinoa, black beans, sweet potatoes, bell peppers, and a zesty honey-lime dressing.
Ingredients:
  • 3 cups quinoa
  • 1.5 cups water
  • 0.75 teaspoon adobo seasoning, or more to taste
  • 1 tablespoon olive oil, or to taste
  • 3 medium sweet potatoes, peeled and chopped
  • 0.75 cup onion, chopped
  • 1.5 cups canned black beans, rinsed
  • 3 medium red bell peppers, sliced
  • 3 medium avocados, sliced
  • 1 tablespoon chopped fresh cilantro, or to taste
  • 9 tablespoons lime juice
  • 6 tablespoons canned coconut milk
  • 3 tablespoons water
  • 3 tablespoons raw honey
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt, or more to taste
Instructions:
  • After rinsing the quinoa in a fine mesh strainer, transfer it to a small pot. Pour in 1 1/2 cups of water and bring it to a boil. Stir in 3/4 teaspoon of adobo seasoning, reduce the heat, and let it simmer until the quinoa is tender and the water is nearly absorbed, approximately 15 minutes. Once ready, remove from the heat.
  • Cook the sweet potatoes and onion in a skillet with 1 tablespoon of oil over medium heat until the sweet potatoes are tender, about 10 to 15 minutes. Season with salt, pepper, and additional adobo seasoning if desired. Remove from heat after cooking.
  • Prepare the dressing by whisking together lime juice, coconut milk, water, honey, olive oil, and salt until well combined. Set aside.
  • Divide the quinoa, sweet potato-onion mixture, black beans, bell peppers, and avocados among 6 bowls. Drizzle with honey-lime dressing and top with cilantro for a finishing touch.
