Southwestern Bean Skillet

"30-minute veggie-packed one-skillet supper bursting with corn, peppers, beans, and tomatoes."
Ingredients:
  • 1 cup fresh corn kernels or frozen corn
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 small onion, chopped (1/4 cup)
  • 1 can (15 ounces) chili beans in sauce, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup shredded Mexican Cheddar Jack with jalapeño pepper cheese blend (4 ounces)
  • 2 medium tomatoes, chopped (1 1/2 cups)
Instructions:
  • Combine all ingredients, leaving out the cheese and tomatoes, in a large 12-inch skillet. Bring to a boil, then lower the heat, cover, and let it simmer for 5 minutes.
  • Simmer uncovered for 5 to 10 minutes, stirring occasionally until vegetables are tender. Add cheese and tomatoes, stirring until the cheese is melted.
