Spaghetti Squash with Parmesan and Pine Nuts

Delicious and flavorful side dish made with pine nuts, Parmesan, and herbs, a must-try for an easy and enjoyable meal.
Ingredients:
  • 1 spaghetti squash
  • 1 tablespoon butter
  • 1/2 cup toasted pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano leaves
  • Salt and pepper
Instructions:
  • Preheat oven to 350°F and line a cookie sheet with foil.
  • Carefully halve the squash lengthwise with a sharp knife. Scoop out the seeds using a spoon, then lay the squash halves cut-side down on a baking sheet.
  • Bake until a knife can be inserted with slight resistance, approximately 30 minutes.
  • Allow the squash to cool slightly. Using a fork, delicately separate the strands of the cooked squash. Measure out 6 cups of the squash and transfer them to a large bowl.
  • Dice the butter into small cubes, then mix it into the warm squash, stirring gently until the butter melts. Fold in the pine nuts, Parmesan cheese, basil, and oregano. Season with salt and pepper to your liking. Serve the dish while it's warm and enjoy!
