Impress with layers of cheesy tomato basil torte atop seasoned pasta in a springform pan.
Ingredients:
  • 1 pound uncooked spaghetti
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup ricotta cheese
  • 1 tablespoon Italian seasoning
  • 4 egg whites
  • 0.25 cup chopped fresh basil
  • 2 tomatoes, chopped
  • 4 slices provolone cheese, cut into fourths
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and generously coat a 9x3 inch springform pan with cooking spray.
  • Prepare spaghetti as per package instructions. After cooking, refresh with cold water and thoroughly drain.
  • Combine Parmesan and ricotta cheeses, Italian seasoning, and egg whites in a large bowl. Toss with cooked spaghetti until coated.
  • Layer half of the spaghetti mixture in the prepared pan. Sprinkle with half of the basil, then layer with half of the tomatoes and half of the provolone cheese. Add the remaining spaghetti mixture, sprinkle with the rest of the basil, and top with the remaining tomatoes. Finish by placing the remaining provolone cheese on top.
  • Bake for 30 minutes, then allow to rest for 15 minutes before gently removing the sides of the pan and transferring to a serving platter. Cut into wedges for serving.
