Ingredients:
  • 400g spaghettini no 7 (Barilla brand)
  • 1 leek, white section only, halved lengthways
  • 160mls (2/3 cup) chicken style liquid stock
  • 600g smoked chicken, skin discarded, roughly chopped
  • 160g marinated artichokes
  • 2 tomatoes, quartered, seeds removed, flesh diced
  • 80g (1/2 cup) walnut halves, roughly chopped
  • Salt & ground black pepper, to taste
Instructions:
  • Boil spaghettoni in a large saucepan of salted water according to package instructions until just tender. Drain and cover to retain warmth.
  • Prepare the leek by washing it thoroughly and slicing it thinly. Heat olive oil in a large frying pan, then add the leek and garlic. Cook for about 5 minutes until the leek becomes soft, stirring occasionally.
  • Turn up the heat to medium and toss in the stock, chicken, artichokes, and tomatoes. Sauté for 4-5 minutes until the chicken is warmed through.
  • Mix in the crunchy walnuts and season generously with salt and pepper. Toss in the drained spaghettoni until well-combined. Serve promptly for maximum flavor.
