Irresistibly crunchy drop cookies with walnuts, coconut, crispy cereal, and optional extra raisins.
Ingredients:
  • 1 cup butter, softened
  • 2 cups brown sugar
  • 4 cups high protein crisp rice and wheat cereal
  • 1 cup flaked coconut
  • 0.5 cup raisins
Instructions:
  • Start by preheating the oven to 375 degrees F (190 degrees C. Next, sift together the flour, baking powder, baking soda, and salt; then set aside.
  • In a large bowl, mix the butter and brown sugar until smooth. Add eggs one at a time, then stir in the vanilla. Gently fold in the sifted ingredients. Combine cereal, coconut, walnuts, and raisins. Place tablespoonfuls of dough on ungreased cookie sheets, keeping cookies 2 inches apart.
  • Bake in the preheated oven for 9 to 12 minutes. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
