Elevate classic peanut butter cookies with oats, chocolate chips, and coconut for a flavorful twist perfect for a lunchtime treat.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup butter, softened
  • 0.5 cup peanut butter
  • 0.5 cup brown sugar
  • 0.5 cup white sugar
  • 2 eggs
  • 1 cup quick-cooking oats
  • 0.5 cup shredded coconut
  • 0.5 cup chocolate chips
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a large baking sheet by lining it with parchment paper.
  • Combine flour, baking powder, and baking soda in a bowl and whisk until well mixed.
  • In a bowl, use an electric mixer to blend together butter, peanut butter, brown sugar, and white sugar until smooth. Add eggs one at a time, mixing well after each addition, until the mixture is smooth and creamy.
  • Mix oats into butter mixture until combined. Add coconut to butter mixture and mix well; gently fold in chocolate chips. Combine butter mixture with flour mixture until a smooth dough forms.
  • Take approximately 1 tablespoon of dough per cookie and roll it in your hands, then place the balls on a baking sheet about 2 inches apart. Gently press each ball with a fork coated in flour to flatten the dough.
  • Bake in the preheated oven for about 10 minutes until lightly browned. Allow the cookies to cool on the baking sheet for around 5 minutes before transferring them to a wire rack to cool completely.
