Enjoy convenient Special K breakfast balls for a delicious cereal fix on the fly.
Ingredients:
  • 12 fresh medjool dates, pitted, roughly chopped
  • 125.00 ml almond spread
  • 62.50 ml raw cashews
  • 21.60 gm honey
  • 500.00 ml Special K original
  • 56.10 gm desiccated coconut
Instructions:
  • Combine dates, cashews, honey, cinnamon, 1 1/2 cups cereal, and 1/2 cup coconut in a food processor. Pulse until mixture is well combined and forms a coarse texture.
  • Crush the remaining cereal gently and place it in a bowl along with the rest of the coconut. Mix well. Shape 1 level tablespoon of date mixture into a ball, then roll it in the coconut mixture. Place it on a large plate. Repeat with the rest of the date and coconut mixtures. Refrigerate for 20 minutes until firm. Serve and enjoy!
