Speedy salmon and rocket pasta

Transform frozen fish patties into a quick and delicious pasta dinner in just 15 minutes.
Ingredients:
  • 375g dried spiral pasta
  • 75.08 gm extra virgin olive oil
  • 400g packet frozen dill and chives salmon burgers
  • 2 tsp lemon rind, finely grated
  • 42.00 gm lemon juice
  • 2 tsp baby capers, drained
  • 40.00 ml parmesan, grated
  • 400g punnet tomato medley mix, halved
  • 1 avocado, diced
  • 60g baby rocket
Instructions:
  • Prepare the pasta as directed on the package. Drain and transfer back to the pot.
  • Heat 1 tablespoon of oil in a large frying pan over medium heat. Cook salmon burgers for 4 minutes on each side until they are golden and cooked through. Then, slice into 2cm pieces.
  • In a small bowl, combine the remaining oil with lemon rind, lemon juice, baby capers, and half of the parmesan. Season with salt and pepper, then whisk until well combined.
  • Combine the oil mixture, burger pieces, tomato, avocado, and rocket with the pasta. Toss everything together and serve topped with the remaining parmesan.
