Spicy cauliflower with ginger, turmeric, garlic, and chile powder, a quick and easy microwave side dish.
Ingredients:
  • 2 teaspoons oil
  • 0.5 teaspoon black mustard seeds
  • 0.25 cup chopped onion
  • 1 clove garlic, minced
  • 0.5 teaspoon slivered fresh ginger
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon chile powder
  • 2 cups cauliflower florets
  • 0.5 teaspoon lemon juice
Instructions:
  • In a small skillet, heat oil over medium-high heat, then add mustard seeds and cover. Cook until seeds stop popping, for about 2 to 3 minutes. Add onion to the skillet and continue cooking and stirring over low heat until translucent, approximately 10 minutes.
  • Combine garlic, ginger, turmeric, chile powder, and salt with the onions, sauté for 30 seconds. Add cauliflower and stir for 1 minute. Transfer cauliflower to a covered microwave-safe bowl.
  • Microwave cauliflower until tender, approximately 3 minutes, then generously drizzle with fresh lemon juice.
