Spiced chickpea & cashew mix

Kick off your Indian feast with these irresistible spicy appetizers.
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 36.80 gm vegetable oil
  • 10.00 gm curry powder
  • 20.00 ml cumin seeds
  • 2 tsp ground turmeric
  • 1 tsp garam masala
  • 125g (3/4 cup) raw cashews
  • Sea salt flakes, to serve
Instructions:
  • Gently press the chickpeas with a paper towel to remove excess moisture.
  • Preheat the oven to 220ºC and line a large baking tray with non-stick baking paper. In a large bowl, mix together oil, curry powder, cumin seeds, turmeric, and garam masala. Set aside 1 tablespoon of the spice mix in a small bowl. Coat the chickpeas with the remaining spice mix and season with salt. Spread the seasoned chickpeas on the baking tray in a single layer. Bake for 25 minutes until they turn light golden.
  • Coat the cashews in the flavorful spice mixture. Mix them with the chickpeas and bake for 5-10 minutes until both are crunchy and golden. Let them cool, then finish with a sprinkle of sea salt flakes.
