Indulgent and flavorful pear and spice cake with a moist, irresistible texture. Perfect for sharing to prevent eating both loaves alone.
Ingredients:
  • 2 cups brown sugar
  • 1 cup vegetable oil
  • 0.25 cup molasses
  • 3 eggs
  • 1.25 teaspoons salt
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.75 teaspoon ground cloves
  • 1.5 teaspoons ground ginger
  • 0.25 teaspoon ground allspice
  • 4 very firm D'Anjou pears, thinly sliced
  • 3 cups all-purpose flour
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C and generously grease two large loaf pans to ensure a perfect pear loaf every time.
  • Combine brown sugar, vegetable oil, molasses, and eggs in a large bowl. Add salt, baking soda, cinnamon, cloves, ginger, and allspice. Coat pear slices evenly. Mix in flour and pour batter into loaf pans.
  • Bake for 50 to 65 minutes, then cool loaves in the pan for about 10 minutes before transferring to a wire rack to cool completely.
