Sweet and spicy Thai iced coffee is the perfect way to kick off your meal.
Ingredients:
  • 25g (1/4 cup) instant coffee granules
  • 3cm-piece fresh ginger
  • 1 x 7cm cinnamon stick
  • 5 whole cloves
  • 1.25L (5 cups) boiling water
  • 250ml (1 cup) sweetened condensed milk
  • Crushed ice, to serve
  • 125ml (1/2 cup) Kahlua liqueur (optional)
Instructions:
  • Combine the coffee, ginger, cinnamon stick, and cloves in a spacious heatproof jug. Mix in the water and let it cool completely.
  • Pour the coffee mixture through a fine sieve into a fresh jug, leaving behind the ginger, cinnamon stick, and cloves.
  • Combine the condensed milk in the jug by stirring.
  • Fill elegant glasses with crisp ice cubes, then generously pour in the rich coffee mixture and a splash of indulgent Kahlua for an extra touch of sophistication. Gently stir to perfectly blend the flavors. Serve promptly to enjoy this delightful concoction at its finest.
