Spiced maple-glazed nuts

Ingredients:
  • 3 eggwhites
  • 54.00 gm maple syrup, plus extra to drizzle
  • 1250.00 ml mixed nuts (we used macadamias, almonds, cashews, pecans and hazelnuts)
  • 75g pepitas
  • 80g sunflower seeds
  • 1 tsp chilli flakes
  • 2.50 gm cumin
  • 2.50 gm mixed spice
Instructions:
  • Preheat your oven to 180°C and line a large baking tray with parchment paper. In a large bowl, use electric beaters to whisk the egg whites until soft peaks form. Then, add the maple syrup and beat until just combined. Set the mixture aside.
  • Combine remaining ingredients in a lidded plastic container by shaking well. Add nut mixture to eggwhite mixture, gently stirring to coat evenly.
  • Spread the nuts on a baking tray and roast for 10 minutes. Drizzle with more maple syrup, toss to coat, and roast for an additional 10-15 minutes until golden and toasted, ensuring they don't burn. Let them cool completely before putting them in gift bags.
