Peaches & nut crumble topped moist muffin.
Ingredients:
  • 437.50 ml plain flour
  • 12.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 118.80 gm brown sugar
  • 60g butter, melted, cooled
  • 85.80 gm buttermilk
  • 2 eggs, lightly whisked
  • 200g can peaches in juice, drained, diced
  • 30g butter, chopped
  • 62.50 ml plain flour, sifted
  • 82.50 ml pecan nuts, finely chopped
  • 16.00 gm brown sugar
Instructions:
  • Preheat your oven to 200°C and prepare a 12-hole muffin pan by lining it with paper cases.
  • To make the pecan crumble, combine butter and flour in a food processor and pulse until the mixture looks like breadcrumbs. Mix in the pecans and sugar, then chill in the refrigerator.
  • In a bowl, combine flour, baking powder, cinnamon, and nutmeg by sifting them together. Stir in the sugar and create a well in the center.
  • In a jug, combine butter, buttermilk, and egg. Pour the mixture into a well, then add peach and gently fold until just combined. Fill muffin cases two-thirds full with the batter. Top muffins with pecan crumble. Bake for 15 to 20 minutes until a skewer inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm.
