Spiced roast pork with cherry sauce and slaw - perfect for a crowd!
Ingredients:
  • 2kg pork leg bone in
  • 9.60 gm sea salt
  • 2 tsp Chinese five spice
  • 1.25 gm cinnamon
  • 9.20 gm olive oil
  • 1 shallot, finely chopped
  • 185g cherry
  • 60ml chicken stock
  • 3 tsp red wine vinegar
  • 8.00 gm brown sugar
  • 20.00 ml cherry jam
  • 250g pkt Brand beetroot slaw
  • 61.88 gm whole egg mayonnaise
  • 37.60 gm sour cream
  • 10.60 gm lemon juice
  • 62.50 ml coriander leaves
Instructions:
  • To begin, preheat your oven to 230C. Then, pat the pork rind dry with a paper towel. In a small bowl, mix together salt, five spice, and cinnamon. Sprinkle this mixture over the pork, massaging it onto the rind and into the cuts. Place the seasoned pork on a rack in a baking tray and roast for 30 minutes until the rind begins to blister. Reduce the oven temperature to 200°C and continue roasting for 1 hour and 15 minutes until the pork is cooked to your liking. Let the pork rest, covered, for 15 minutes before serving.
  • Heat oil in a saucepan over gentle heat. Sauté shallot until soft for 2-3 mins. Stir in cherries, stock, vinegar, sugar, and jam. Bring to a boil, then lower the heat and simmer gently for 10 mins until the sauce thickens slightly. Transfer to a bowl and allow it to cool.
  • Place the beetroot slaw in a bowl. In a small jug, mix together mayonnaise, sour cream, and lemon juice. Season the mixture and pour it over the slaw. Add the coriander leaves and toss everything together.
  • Slice the succulent pork and elegantly pair it with a luscious cherry sauce and refreshing slaw.
