Ingredients:
  • 2 sheets frozen puff pastry
  • 1 egg yolk, beaten
  • 40.00 ml raisins
  • 20.00 ml brandy or water
  • 2 large Granny Smith apples, peeled
  • 21.00 gm lemon juice
  • 30g unsalted butter
  • 57.20 gm honey
  • 1/4 tsp allspice
  • 0.63 gm ground cinnamon
  • 200ml thickened cream
  • 12.00 gm icing sugar, plus extra to dust
  • 2.20 gm vanilla extract
Instructions:
  • Preheat your oven to 200°C for the perfect cooking temperature.
  • Prepare a large baking tray with non-stick baking paper. Cut the pastry sheets into quarters and place them spaced apart on the tray. Brush with the egg yolk, bake for 10-12 minutes until golden, then let cool.
  • Infuse the raisins with brandy for 15 minutes to enhance their flavor.
  • Dice the apples into 1 1/2cm pieces and coat them with the refreshing lemon juice.
  • In a large frying pan, melt the butter over low heat, infuse with honey and spices to enhance the flavors. Add apples, raisins, and liquid. Cook over low-medium heat for approximately 10 minutes until golden and caramelized. Let it rest at room temperature before serving.
  • Combine the cream, icing sugar, and vanilla extract in a bowl, whisking until it becomes light and fluffy.
  • Place a square of pastry on each plate, add spiced apple and a dollop of vanilla cream. Add another sheet of pastry on top and dust with icing sugar.
